The reason is, I know the underpinnings of OS X - rock solid BSD Unix. Windows - although it has been making improvements - has yet to prove itself in that respect. I guess the GUI really comes down to a matter of personal preference - although the Linux GUI isn't always pretty it does at least get the job done, which is good enough for me. Still, I hear that Windows 7 is meant to be good, and that's around the corner... I guess I should see what happens when that comes out!
